Xacuti de poulet – Chicken Xacuti




L’Etat indien de Goa a une forte influence portugais puisqu’il a été colonisé jusqu’à 1961. Tout à Goa a une touche portugaise –la langue, l’architecture et bien sûr la cuisine. Le Xacuti (ou Shakuti) est une recette de Goa. C’est un curry de poulet ou de chèvre fait avec un mélange d’épice (massala) spécifique et cuit dans une pâte de coco, oignons et graines de pavots. Cette pâte rend le curry très parfumé mais légèrement piquant.

Sylvain a été à Goa en Inde plus tôt cette année et il m’a ramené du Xacuti masala. Normalement,  quand je fais ce curry, j’en préparé toujours la quantité de massala qui était nécessaire à chaque fois. J’ai préparé ce curry pour utiliser le massala que j’ai reçu. Xacuti de poulet
Ingrédients
1 poulet, coupé en petits morceaux
2 oignons, émincés
1 càc + 1  càs de l’huile
1 tasse (250 ml) de noix de coco
1 càs de graines de pavots
½ càc de curcuma
1 càc de piment en poudre (ou paprika doux)
1 càc de coriandre en poudre
1 càs de Xacuti massala
500ml de lait de coco
1 càs de pulpe de tamarin
Sel
Méthode :
Laisser tremper le tamarin dans 100ml d’eau bouillante pendant 20m.
Faire chauffer 1 càc d’huile et y ajouter la moitié d’oignons émincés.
Quand ils commencent à dorer, ajouter le coco et les graines de pavots.
Lorsque le mélange est bien doré, transférer dans un autre plat et laisser refroidir.
Mixer en ajoutant environ 100 ml d’eau (petit à petit) pour obtenir une très fine  pâte.
Faire chauffer 1 càs d’huile et y faire frire le restant d’oignons.
Ajouter le sel, le curcuma, piment et coriandre en poudre.
Incorporer le poulet et bien mélanger.
Ajouter ensuite la pâte de coco/oignon/pavot.
Mélanger.
Ajouter le lait de coco et laisser mijoter pendant environ 30 minutes.
Incorporer finalement le jus de tamarin.
Note : vous pouvez ajouter plus ou moins d’eau d’après la consistance de la sauce que vous désirez.

Xacuti (or Shakuti) is a Goan recipe. It is a chicken or goat curry made with a specific spices mixture (masala) and cooked in a coconut, onion and poppy seeds paste. This paste makes the curry very fragrant but mild and not too spicy.

Sylvain was in Goa in India earlier this year and he brought me some Xacuti masala. Normally, when I made this curry, I always prepared the quantity of masala that was necessary each time. I made this curry to use the masala that I received. There are recipes for Xacuti masala here and here.

Chicken Xacuti
Ingredients
1 chicken, cut into small pieces
2 onions, chopped
1 tsp + 1 tbsp oil
1 cup (250 ml) Coconut
1 tbsp poppy seeds
½ tsp turmeric
1 tsp chilli powder (or paprika)
1 tsp coriander powder
1 tbsp Xacuti massala
500ml coconut milk
1 tbsp tamarind pulp
Salt
Method:
Soak the tamarind in 100ml of boiling water for 20m.
Heat 1 tsp oil and add half the sliced onion.
When they begin to brown, add the coconut and poppy seeds.
When the mixture is golden brown, transfer to another dish and let it cool.
Grind to a very fine paste by adding about 100 ml of water (a bit at a time).
Heat 1 tbsp oil and fry the remaining y onions.
Add salt, turmeric, chilli and coriander.
Add chicken and mix well till coated.
Add the coconut paste / onion / poppy stirring all the time.
Add the coconut milk and simmer for about 30 minutes.
Finally put in the tamarind juice.
Note: You can add more or less water depending on the consistency of the sauce that you want.
