Scotch eggs




L’histoire de ce billet est très drôle. On regardait un jeu télévisé tous les trois, et on a posé une question de l’origine des scotch eggs – bien sûr, on est tous tombés dans le panneau… Les scotch eggs sont anglais et n’ont rien d’écossais. Notre fille voulait savoir ce qu’était ce plat et quand elle a vu les photos, elle nous avait toute de suite demandé d’en faire !

J’avais fait des scotch eggs quand j’étais encore en Inde. A l’époque, on les faisait avec des œufs durs. Maintenant, on les fait avec les œufs mollets avec le jaune bien coulant. Je me suis mis en défi de les faire – il fallait maîtriser la cuisson d’œuf et aussi gérer la deuxième cuisson en friteuse. Pour la cuisson des œufs, j’ai décidé d’utiliser la technique de cuisson après l’ébullition de l’eau.

Bien que je le dise moi-même, je ne suis pas peu fière des résultats.

Scotch eggs
Ingrédients pour 6
8 œufs
600g de viande hachée (mélange veau/porc pour moi)
1 cup (250ml) de chapelure
4 càs de farine
Sel, poivre
Bain de friture
Méthode
Préparer un bol avec l’eau et des glaçons.
Percer la partie bombée de l’œuf avec une aiguille.
Porter l’eau à l’ébullition.
Ajouter les œufs et mettre la minuterie pour 7 minutes.
Avec une cuillère en bois, tourner les œufs pendant une minute pour assurer que le jaune soit au milieu de l’œuf.
Dès que la minuterie sonne, sortir les œufs et les plonger dans l’eau glacée pour arrêter la cuisson.
Mélanger la viande avec 4 càs de chapelure, sel, poivre et 1 œuf et diviser le mélange de viande hachée en 6 parts.
Écaler les œufs délicatement sous un filet d’eau et réserver.
Sécher et fariner les œufs.
Préparer la panure : la farine, 1 œuf légèrement battu, la chapelure.
Prendre un part de viande et l’étaler sur un film ou votre paume.
Place un œuf sur la viande et rabattre de sorte à couvrir complètement l’œuf avec de la viande.
Passer par la farine, œuf et chapelure pour paner.
On peut faire une double panure si nécessaire.
Laisser les œufs panés au frais pendant une demi-heure.
Faire chauffer un bain de friture.
Frire 4-5 minutes jusqu’à ce que les œufs dorent.
Servir tout de suite avec une salade.

The three of us were watching a quiz on TV, and there was a question on the origins of scotch eggs - of course, we all fell for trap ... we learnt that in fact Scotch eggs are English and have nothing to do with Scotland. Our daughter wanted to know what this dish was and when she saw photos on the web, she immediately asked us to make some!

I had made scotch eggs when I was still in India. At the time, I made them with hard boiled eggs. These days, they are made with soft-boiled eggs and a runny yolk. I took up the challenge – I had to master cooking the egg and also manage the second cooking in fryer. For cooking the eggs, I decided to use the cooking technique of adding the eggs after boiling the water. Even if I say so myself, I'm very proud of the results.

Scotch eggs
Serves 6
8 eggs
600g minced meat (veal / pork mixture for me)
1 cup (250ml) breadcrumbs
4 tbsp flour
Salt pepper
Oil for deep frying
Method
Prepare a bowl with water and ice.
Pierce the rounded side of the egg with a needle.
Bring water to the boil.
Add eggs and set the timer for 7 minutes.
With a wooden spoon, turn the eggs around for one minute to ensure that the yolk is in the middle of the egg.
When the timer rings, remove the eggs and plunge into ice water to stop cooking.
Mix meat with 4 tbsp bread crumbs, salt, pepper and 1 egg and divide the ground meat mixture into six parts.
Shell the eggs gently under a stream of water and reserve.
Dry and roll the eggs in flour.
Prepare the crumbing: flour, 1 egg, lightly beaten, breadcrumbs in separate plates or bowls.
Take a portion of meat and spread it on a piece of cling film or your palm.
Place an egg on meat and fold over so as to completely cover the egg with the meat.
Pass them through the flour, egg and breadcrumbs to bread.
One can do a double breading if wanted.
Leave breaded eggs in the fridge for half an hour.
Heat oil for deep frying.
Fry 4-5 minutes until golden brown eggs.
Serve immediately with a salad.
