Brownies au chocolat James Martin - James Martin’s Chocolate Brownies




Dans mon éternelle recherche pour la collation séduisante pour Tara, je suis tombée sur cette recette de James Martin. James Martin anime l’émission « Saturday Kitchen » sur le BBC1 tous le samedi matin. J’admire son aisance en matière de multi-tâche, il est capable d’interviewer les invitées toute en cuisinant, même en exécutant des gestes très techniques.

En tout cas, cette recette est absolument géniale que vous trouverez ici en VO. J’ai ajouté les noix et des amandes et j’ai utilisé du beurre salé. En fait, c’est suite à un oubli, mais comme la pâte était déjà au four, j’en ai saupoudré la pâte avec les noix. Non seulement que ça donne un bel effet, mais le goût de noix torréfiés accompagne bien les brownies. Pour un dessert gourmand, servez-les avec une boule de glace ou de la crème anglaise.



Brownies au chocolat James Martin
Ingrédients
Huile QS
350g de chocolat noir, cassé en petits morceaux
250g de beurre salé
3 œufs
250g de sucre muscovado
100g de farine
1 càc de baking powder
1 tasse de noix, grossièrement concassés
1 tasse d’amandes, grossièrement concassés
Méthode
Préchauffer le four à 170°C et graisser un moule carré de 22 cm.
Faire fondre le chocolat et le beurre dans un cul de poule sur une casserole d’eau chaude. Cette étape peut être faite dans un four micro-ondes.
Fouetter les œufs et le sucre ensemble pour faire fondre le sucre.
Ajouter le mélange chocolat et beurre.
Y tamiser la farine et le baking powder et mélanger.
Verser la pâte dans le moule.
Saupoudrer avec les noix et l’enfoncer légèrement.
Cuire 35 minutes ou jusqu’à ce qu’un couteau foncé dans le centre recentre sec mais avec des miettes encore adhérentes.
Laisser refroidir complètement avant de découper en morceaux.
Conserver au frais.

In my eternal search for a seductive snack for Tara, I fell up this recipe by James Martin. James Martin hosts the TV show “Saturday Kitchen” on BB1 every Saturday morning. I admire his multi-tasking skills, he can interview guests while accomplishing the most difficult tasks in the kitchen.

In any case, the original version of this wonderful recipe can be found here. I added walnuts and almonds and salted butter. In fact,  I fogot to add the nuts to the batter and it was already in the oven, so I just put them on the top. Not only did the brownies look stunning but the nuts had a nice toasted taste to compliment the brownies. For a scrumptious dessert serve them with custard or a scoop of ice cream.



James Martin’s Chocolate Brownies
Ingredients
oil, for greasing
350g dark chocolate, broken in small pieces
250g unsalted butter
3 eggs
250g dark brown sugar, preferably muscovado
100g plain flour
1 tsp baking powder
Method
Preheat the oven to 170°C and lightly grease a 22cm square cake tin.
Melt the chocolate and butter in a heatproof bowl over a pan of hot water. This step can be done in a microwave oven.
Whisk the eggs and sugar together for 2-3 minutes until the sugar has melted.
Fold the chocolate mixture into the egg mixture.
Sieve the flour and baking powder into the mixture and stir.
Pour the mixture into the cake tin.
Put it the middle shelf of the oven and bake for 35 minutes or until a knife pricked in the centre comes out dry but with crumbs still on.
Allow to cool completely in the tin before slicing the brownies.
Store in the fridge.

J’avais déjà posté la recette de ce plat ici. Le sheera peut être un plat simple, cuit dans de l’eau sans noix, ni garnitures particuliers pour un petit déjeuner quotidien. Ou bien, ce plat peut se montrer son côté très sophistiqué quand il est cuit avec du lait au lieu de l’eau ou, quand diverses noix telles les noix de cajou, des amandes, des pistaches ou un mélange est utilisée ou quand, on ajoute des parfums plus exotiques safran, cardamome, etc. Tout dépend des ingrédients ajoutés à la recette de base ; Et les garnitures aussi – des noix hachées, ou comme moi, des feuilles d’argent. C’est beau, non ???

Je voudrais remercier Minouchka de m'avoir offert ces feuilles d'argent.

I have already posted my recipe for this dish here in French. But since by blog is now also in French, I’ll give the translation below.


Sheera can be a simple everyday breakfast dish when cooked with just water and without nuts or any particular garnish. Or else, sheera can be one very sophisticated dish either when cooked in milk, or when garnished with nuts like almonds, cashew, pistachio or a mixture, or when flavourings like saffron or cardamom are added. All depends on the ingredients added to the basic recipe; and also on the garnish – chopped nuts or like I did with some silver leaf (varak). Aren’t they beautiful???

I would like to thank Minouchka for the varak/silver leaves that she gave me.

Sheera
For 6-8 persons
Ingredients :
1 cup (250ml) semolina/cream of wheat
2 tbsps ghee
½ cup (125ml) water
½ cup (125ml) milk
½ cup (125ml) sugar
½ tsp de saffron
a pinch of salt
½ cup (125ml) cashew nuts

Method:
Mix the water, milk, sugar and the saffron.
Boil and remove from the stove (this stage can be done in the microwave oven)
Heat the ghee in a wok.
Add the semolina and sat and fry till golden brown on a very flame, stirring all the time.
When the semolina is golden (and no longer tastes “raw”) around 7-10 mins, add the liquid mixture.
Stir so that no lumps form, till all moisture is absorbed.
Add nuts and stir.
Pour in a plate and let it cool.
Cover with silver paper and slice in square pieces.
Enjoy!!

Notes : One can use other flours or semolina to make this dish (ex : water chestnut flour, whole wheat, millet, etc...
One can add fruit purées at the end (ex mango, banana, etc)
One can garnish the dish with nuts (almonds, cashew, pistachio or a mixture) and dried fruits (raisins, etc).

Ce billet est pour Elo et pour Senga. Elles m'avaient demandé des photos des nankhataïs. Je n'arrive pas à modifier mon billet et je n'ai pas la patience de chercher le problème - donc, pour vous les voici...




J'ai garni chaque nankhataï de trois Tcharolis. Cette petite noix Charoli ou Chironji est de la taille d'une lentille et est utiliseé souvent pour décoration. Je note le Nom scientific pour les jardiniers. J'ai aussi trouvé un article dans le NY Times sur cette noix.
